Objective:
This hands-on training is designed to provide students with practical exposure to the
processing, preservation, and quality assessment of pickles made from locally available
vegetables. Led by Mr. Gagandeep Chahal, Head CCHMT, the session will enhance
students’ understanding of fermentation techniques, food safety standards, and
commercial aspects of pickle production.
Key Learning Outcomes:
1. Understanding the significance of pickling as a food preservation technique.
2. Learning about different types of pickles, including fermented, oil-based, and brine-
based pickles.
3. Selection and preprocessing of locally available vegetables
4. Hands-on training in preparation, salting, seasoning, and fermentation of pickles.
5. Understanding the role of microbial fermentation in flavor and texture development.
6. Learning about packaging, shelf-life enhancement, and quality control.
7. Exploring commercial potential and entrepreneurship opportunities in pickle
processing.
